Cookshack AmeriQue Smoker
Featuring digital technology, the Cookshack AmeriQue BBQ Smoker allows you to smoke-cook your meat at a temperature and time that you set. When the cycle finishes, the AmeriQue automatically goes into its hold cycle.
One of its most popular features is its meat probe, which allows you to set the desired internal meat temperature. When the meat reaches that temperature, the smoker automatically goes into its hold cycle.
Using technology previously available only to professional chefs, home barbecuers can now smoke-cook restaurant quality pit barbecue and smoked foods. The features in the AmeriQue SmartSmoker are the result of a nationwide survey asking avid backyard barbecuers what they wanted in a smoker. Using the technology for which Cookshack is known in the restaurant equipment industry, Cookshack designed the ultimate in home smoking machines, the AmeriQue.
The AmeriQue gives you more control over your barbecue than ever before. Using the electronic IQ controller and meat probe, the AmeriQue smoke-cooks just the way you tell it to. Whether you are cooking beef tri-tip or pork butt, all you have to do is probe the meat, set the cooking temperature or desired internal meat temperature (if using the probe), and walk away. It turns out great, every time.

In the early 90's Cookshack developed its IQ series of controllers for its commercial line of smokers. We have updated our line of home use smokers from mechanical thermostat units to these electronically controlled thermostats, adapted for home use. The major differences between a mechanical thermostat unit and an electronically controlled unit are the temperature variance in the units and the user's ability to see the oven temperature. This new controller was designed to control the variance in temperature in the oven when cooking small loads. It is not unusual with a mechanical thermostat to see temperatures of 70 to 80 degrees above the set point and then to watch the unit crash to 70 or 80 degrees below set point. This temperature variance causes the product being cooked to swell and shrink each time the oven goes through this process.
With the IQ controllers Cookshack was able to take that temperature swing to just a few degrees over and under.
The AmeriQue's electronic controller allows smoke-cooking by setting the desired cooking temperature with options for setting cooking time or monitoring internal meat temperature with the commercial quality meat temperature probe. When the temperature probe is connected the AmeriQue automatically defaults to the temperature probe setting and a preferred internal meat temperature should be selected. The AmeriQue cycles to a hold temperature of 140 degrees at the end of the timed cycle or when the selected probe temperature is reached. The AmeriQue's electronic controller has a LED panel that displays the cooking temperature and the remaining time when using the timer, or the internal meat temperature when using the meat probe.
